Specializing in semi-cooked foie gras for 30 years, Tradition & Gourmandises is a subsidiary of Maison Soulard, a duck breeder in the Vendée region since 1936. They work with the livers of male Mulard ducks raised outdoors in the Herbiers de Vendée region, fed a 100% plant-based diet of French origin. Benefiting from a year-round temperate climate, the Vendée terroir offers a natural, stress-free environment for raising ducks in large pastures, free from heat waves. This integrated supply chain also ensures indisputable traceability. After 12 weeks, the force-feeding stage takes place with two meals a day in a climate-controlled room with subdued lighting. Extracted while still warm and quickly cooled, the finest livers are then sorted and shipped overnight to Tradition & Gourmandises for hand-processing according to exclusive traditional recipes, using high-precision equipment that guarantees exceptional consistency.
