The Isigny-Sainte-Mère Cooperative operates within a 35 km geographical collection area in the Cotentin peninsula and the Arcachon Basin around Isigny-sur-Mer. This lush, grassy region is a veritable “fountain of butter and cream,” thanks to its rich and fertile soils (alluvial deposits, 170 days of rain per year ideally distributed, mild summers, and mild winters). The result is milk rich in minerals, trace elements, and oleic acid. The dairy is owned by the producers and processes the collected milk within 48 hours using traditional methods.
