Description
The European seabass is recognizable by its fusiform body, two separate dorsal fins, and opercula protecting its gills. Silvery in color, it has large, shiny scales. The two most common species of seabass on the French coast are the European seabass and the less common spotted seabass, which never exceeds 70 cm and has numerous black spots on its body. Its flesh is lean, with a subtle flavor, and boneless.
